Quick + Easy Khichdi Recipe

Here is my quick and easy recipe for a delicious bowl of khichdi. I make this recipe in a few different variations and both my husband + toddler love the recipe. And whenever my nieces or nephews are over, when all else fails in the picky eater department, this recipe does not disappoint. This particular recipe also got me through Hyperemesis Gravidarum my last pregnancy.

Preparation

  1. Wash and soak the rice and lentils in the same bowl for at least 15 minutes
  2. On medium-high heat, add ghee and fry the onions until translucent
  3. Add in your cumin seeds til toasted
  4. Reduce the heat to low and add your garlic + ginger paste
  5. Add your salt, turmeric and pepper, stir occasionally for about a minute
  6. Once all the seasonings are mixed well, add in water + broth
  7. Bring the water to a boil and add in your rice and lentils
  8. Cover and steam for 5-10 minutes. Steam again to reach your desired consistency
  9. Serve warm with a dollop of ghee and achaar
